Vegetable Dum Biryani Recipe

Veg. Dum Biryani 
Ingredients for rice :

  •  2 cups Basmati Rice 
  • 8-10 black pepper 
  • 2 cardamom 
  • 1 brown cardamom 
  • 4 cloves 
  • 1 bay leaf  
  • 1 medium size cinnamon stick 
  • 1-star anise 
  • 1/2 tsp salt 
  • 1 litre of water 

Ingredients for vegetables :
  • 1 potato peeled and chopped 
  • 1 carrot peeled and chopped
  • 1 capsicum chopped
  • 1/2 cup chopped french beans 
  • 1/2 cup chopped cauliflower 
  • 1 chopped onion 
  • 2 tomatoes chopped or puree
  • 1 tsp sugar
  • 1 tsp red chilli powder
  • 1/2 turmeric 
  • 4 tbsp oil
  • salt to taste 
  • 4 tbsp curd 
Ingredients for grind to make a paste for cooking the Vegetables :

  • 1 tsp cumin seeds
  • 3-4 Cloves
  • 1/2 tsp black pepper 
  • a pinch of Nutmeg (jaiphal)
  • 1/2 blade of Mace (javitri)
  • 2 green cardamom 
  • 1 brown cardamom 
  • 1 medium size cinnamon stick 
Ingredients for Layering the Biryani :

  • 1 pinch of Saffron+2 tbsp warm milk(Mix and soak for 20 minutes)
  • 10-12 Cashew fried 
  • 2 tbsp chopped coriander or mint leaves
  • 1 chopped onion fried 
  • 1/4 tsp green cardamom powder or crushed 
Method :
Wash Basmati rice really well, soak it for 30 minutes.
Boil 1-litre water in a big Kadai (pot) and add all the spices given in Ingredients for rice. Now after the water has come to a boil, add soaked rice and cook on high flame till the rice is properly cooked (take out one grain of rice and if you can mash it between your fingers, it is ready). Now drain the water and keep aside.

Now in a grinder, add ingredients for spices and grind it to make a paste. You can add few tbsp water while grinding the spices. Now heat oil in a pan, add chopped onion and saute. Fry it till onions are translucent. Now, add all chopped vegetables along with tomato in the pan and fry it for 5 minutes on medium flame. Now, add ground paste in the pan, red chilli powder, turmeric powder, salt, sugar and saute for 5-7 minutes. Now add curd and mix well. Switch off the flame and keep it aside.

Now take another heavy bottom vessel or pan and add half of the cooked rice. Then put cooked vegetables. Then, add fried onion, fried cashew, coriander or mint leaves and add leftover rice on the top of cooked vegetables. Now, sprinkle saffron dissolved in milk on the biryani and garnish with fried cashew, cardamom powder and leftover fried onion. Now covered the pot and cook it on low to medium heat for about 10 minutes. Turn off the heat. Serve hot with raita, yogurt.
