Silky Zucchini Soup recipe





Ingredients : 
  • 1 piece Zucchini, finely chopped 
  • 1 onion, chopped 
  • 5-6 garlic cloves 
  • 1 green chilli 
  • 1 tbsp butter 
  • 2 tbsp Olive oil
  • 1 tbsp corn flour+1/4 water 
  • salt to taste
  • 1/4 tsp crushed black pepper 
  • 1 bowl vegetables stock or water
  • 2 tbsp grated Zucchini for garnishing 


Method : 
Heat Olive oil in a saucepan, add garlic, onion, green chilli and saute for few seconds. Now, add chopped Zucchini and cook for 1 minute, until it becomes very soft. Remove and keep aside to cool. Now, put them in a blender make a smooth puree. Now, again heat butter in a saucepan, add puree and water or veg. stock, salt and cook for 2 minutes. . Add cornflour dissolved in water and stir for 1 minute. Season with black pepper. Turn off the heat. Garnish with grated or finely diced zucchini and crushed black pepper. Serve hot.
