Paneer Kofta curry recipe (without potato)


Paneer Kofta 

Ingredients :
For Paneer kofta,
  • 1 cup mashed or grated paneer(Cottage cheese)
  • 2 tbsp maida (All purpose flour)
  • 1/2 onion finely chopped 
  • 2 green chillies finely chopped 
  • 1/4 tsp salt 
  • 1/2 tsp black pepper powder 
  • A pinch of baking soda powder 
  • Oil for frying 
For Gravy or Kofta curry,
  • 1 medium onion finely chopped 
  • 1/2 cup Tomato puree 
  • 2 onions paste 
  • 1 tbsp garlic-ginger paste
  •  1/2 tsp turmeric powder 
  • 1 tbsp coriander powder 
  • 1 tsp red chilli powder 
  • 1/2 tsp garam masala powder 
  • salt to taste 
  • 2 tbsp ghee or butter or 3 tbsp oil
  • 1/2 tsp cumin seeds 
  • 1 small cinnamon stick 
  • 2 green cardamom 
  • 2 cloves 
  • 1 bay leaf 
  • 10-15 cashew nuts 

Method :
For Kofta,

Take mashed or grated paneer in a bowl, add all purpose flour (maida), salt, green chilli, onion, black pepper powder, a pinch of baking soda powder, few drops water and mix well. Now make small lemon size balls and keep aside. Heat oil in a frying pan and deep fry until golden brown.

 For kofta curry or gravy,

Soak cashew in 1/2 cup of water for 20 minutes, make paste in a blender.
Heat ghee in a pan, add cumin seeds, cloves, green cardamom, cinnamon stick, bay leaf and crackle them. Now add chopped onion and cook until onion are light brown in colour. Now add garlic-ginger, onion paste and cook for 2 minutes. Add all spices powder, salt and cook for 1 minute. Now add tomato puree and cook for 5 minutes over medium flame. Now add, a bowl of water, mix well. After 5-7 minutes, add fried paneer balls or kofta and cook for 1 minute. And add cashew nut paste and mix well, cook for 2 minutes. Now turn off the heat. Serve it with rice or pulao.
