Vegetables pulao recipe

Ingredients :
  • 1 cup Basmati Rice
  • 1 chopped carrot
  • 1/2 cup of green peas
  • 1/2 cup of corn
  • 1/2 cup chopped capsicum or beans 
  • 1 cinnamon stick
  • 4-5 cloves 
  • 1-star anise 
  • 1 bay leaf
  • 2-3 green cardamom 
  • 10-15 cashew nuts 
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tbsp deshi ghee or Butter 
  • 1 cup + 1/4 cup hot water 
Method :
Wash and drain Basmati rice and keep it aside for 30 minutes. If you are using a pressure cooker, cook for 1 whistle. If you are a heavy bottomed pan cover it with a lid and let it cook. Now heat ghee or butter in a heavy bottom pan, add cinnamon, cardamom, star anise, cloves, bay leaf and saute for few sec. Now add cashew and stir, add all chopped vegetables and saute for half minute. Now add soaked Basmati rice, salt, sugar and saute for 1 minute on the lower flame. Add hot water and let it come to a boil and reduce the flame. Cook it for 10-12 minutes on the low flame. Now after it is cooked, transfer into other vessel and stir lightly with a ladle and keep aside to cool down. After 10-15, serve it with any gravy sabzi or raita, dal fried etc.
