Ragda-pattices or chat recipe

Ragda-pattices is a popular street food in Indian specially in Mumbai and Delhi. I love ragda-pattices. Ragda-pattices tastes yummy. I think, everybody likes it. 
Ragda-petties 

For 4-5 plates
Ingredients :

For the Ragda,

  • 1 cup dried peas soaked overnight 
  • 4 cups water
  • 1/2 tsp salt
  • 1 tbsp ginger+garlic+green chillies paste 
  • 1 tbsp oil
  • a pinch of baking soda
For the pattices,

  • 4 potatoes boiled, peeled and mashed 
  • 2 green chillies chopped
  • 1 onion chopped 
  • 1/2 tsp red chilli powder 
  • 1/4 tsp turmeric powder
  • salt to taste 
  • 1 tbsp cornflower 
  • 1 tbsp oil for shallow fry
To serve,

  • 1 onion finely chopped 
  • 100 gm. nylon sev 
  • 1/2 cup of green chutney (coriander+mint leaves+green chillies+tamarind pulp+ salt+ 4 garlic cloves)
  • 1/2 cup of sweet tamarind chutney 
  •  rock salt, roasted cumin and roasted carom seeds mix powder for sprinkle 
  • chopped coriander leaves 
Method :
For the ragda,
In a pressure cooker, add peas, water, salt, garlic,ginger, green chilli paste, oil, baking soda and close the lid of the pressure cooker. Now cook till 3-4 whistles and let the cooker cool down.

For the pattices,
In a large bowl, add all ingredients of patties and mix well. Now, make them into flat round patties or as a aloo tikki and shallow fry in a tava or pan with 1 tbsp of oil and take out of tava.
For serving place 2 pattices on a plate and pour the 2 big spoons ragda over. Now top with 1-2 tbsp green and sweet chutneys. Sprinkle the 1/4 tsp rock salt, cumin, carom seeds mix powder, nylon sev, chopped onion and chopped coriander leaves on top. Serve hot ragda-patties.
