Diwali Special: Balushahi recipe

Ingredients : 
For the dough,
  • 1 cup all purpose flour(maida)
  • 4 tbsp deshi ghee
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda( khane ka soda)
  • 2 tbsp curd (Dahi)
  •  water, little 
  • oil or ghee for frying 
For the sugar syrup,
  • 1 cup sugar
  • 1/2 cup water
Method :
Make the balushahi dough,
In a large bowl, mix flour (maida), baking powder, bicarbonate soda, ghee, curd and mix well. Now, add water slowly as needed for making a soft dough. Now cover the dough and keep aside for 20-30 minutes.

Make sugar syrup,
 In a pan, add water, sugar and cook over medium heat for 15-20 minutes. And turn off the flame.

Take the dough and divide into 10-11 equal parts. Now make the dough balls, balls will not be very smooth and will have cracks all around. Now make a deep dent in the center of the balls. Heat oil or ghee in a frying pan and fry balushahi until they are golden brown from both sides and remove them in a plate. Now dip balushahi in the sugar syrup all around and remove them, don't leave them in the sugar syrup and your Balushahi are ready to serve.
