Kachhe Aam(Raw mango) ka paani puri ka paani ki recipe

Paani puri is a famous snacks of India. Everybody likes paani puris. Generally tamarind pulp is used to make the paani puri's paani, but today, I used Raw mango pulp. This paani beats heat and very healthy and digestible. Easy to make and tasty, its taste is sour, sweet, salty and tangy. I have made the new recipe. I hope everybody likes this recipe.


Ingredients :

For puris,
  • 1 cup semolina ( rava)
  • 1/4 cup all purpose( maida)
  • 1/2 tsp salt 
  • oil for deep fry
Method:
Take a large bowl, add semolina, maida,salt and mix well and add warm water little by little to knead a stiff dough. Now cover it with a cloth and put aside for 20-30 minutes. Now mix 15-20 minutes and make small equal lemon sized balls of the dough. Now with the help some dry flour and roll out thin rotis. Make them round with the help of a round cutter. Now heat oil in a pan and fry golden brown puris and remove on the kitchen towel.


For paani,
  • 2-3 pieces small Raw mangoes, (kachha aam)
  • 1 bunch of mint leaves (puddina patta) clean and wash
  • 2-3 green chilies 
  • 1 small piece of ginger 
  • 5 glasses chilled water
  • 2 small cups sugar 
  •  1 tbsp black salt (to taste)
  • 1/4 tsp asafoetida (Hing)
  • 1 tbsp roasted cumin powder 
  • 1 tbsp paani puri masala 
  • 4-5 tbsp fried besan boondi 
Method :
Boil the raw mangoes in a pressure cooker for 2 whistles. Let them cool. Now peel, mash and strain the pulp. Now in a blender, add mint leaves, ginger, green chilies, sugar, mango pulp and make a paste. Now transfer in a large utensil and add chilled water,black salt, asafoetida (hing), cumin powder, paani puri masala and mix well. Now add fried Boondi and serve chill and fill puris up with it.
