Eggplant (baigan) ki sabzi recipe

Baigan ki sabzi 

Ingredients :
  • 1/2 kg. eggplant, chopped and washed
  • 2 chopped tomatoes
  • 1 tbsp coriander powder
  • 1/2 tsp turmeric powder 
  • 1/2 tsp red chilli powder 
  • salt to taste 
  • 1/2 tsp cumin+fenugreek seeds
  • 8-10 curry leaves
  • 1 tbsp oil
Method :
Heat oil in a pan, add seeds, curry leaves and crackle them. Add chopped eggplant, salt and cover with lid. They cook on the high flame for 2 minutes. After open the cover and add all spices, chopped tomatoes and again cover. After 1 minute it stir and cook for 5-7 minutes on the medium flame. Serve with roti and chawal.
