Gujrati Khandvi recipe

Khandvi 

Khandvi is a Gujrati snack. It is very tasty and tempting. It is very easy and requires very little oil. It's taste is sour, light sweet and salty. I made it first time and it turned out to be very nice. Check out my recipe below.

Ingredients :
For khandvi,
  • 1 small cup gram flour (Besan)
  • 1/2 bowl yogurt (Dahi)
  • 1/2 tsp sugar
  • salt to taste 
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 pinch Asafoetida (Hing)
  • 1 cup water 
For tempering or garnish,
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 2 green chilies finely chopped
  • 8-10 curry leaves 
  • 1 tbsp roasted sesame seeds for garnish 
  • 1 tbsp oil for greasing a dish 
Method :
In a large bowl, add gram flour, turmeric, red chilli powder, sugar, salt, asafoetida, yogurt, water and mix well till all the lumps are dissolved and you get a smooth batter. Now pour the batter in a pan and switch on the gas top and keep the flame to the lowest and begin to stir fast. Now keep on stirring when khandvi batter is getting heated up and lumps begin to form and you have to continuously stir. Cook about for 20-25 minutes on the low flame, so that the lumps don't form. Now quickly spread portion of the mixture over the greased inverted dishes top as thinly as possible while the batter is still hot. Keep aside to cool for 5-7 minutes. After it is cool, cut into strips two inches wide and roll them tightly and keep aside. Now heat oil in a pan, add mustard seeds,chilli, curry leaves and crackle. Add over the all pieces and garnish with sesame seeds. You can also garnish with coriander leaves and grated coconut.
