Kesariya (Saffron) Rasmalai Recipe (Holi special)

Kesariya Rasmalai 

Rasmalai is the best dessert ever, in my opinion. It is a famous milk based dessert from India and it is liked by everybody in India.
It is usually served on special occasions and parties. This is rich in its flavor and can be made easily by everyone at home. Rasmalai is a very tempting dessert. My favorite dessert is Rasmalai.

Ingredients :
  • 2-litre milk 
  • 1+1/2 cups sugar 
  • 1 lemon of juice or 2 tbsp vinegar 
  • 1/2 tsp green cardamom powder 
  • 8-10 chopped Almonds or pistachios 
  • 1 pinch Saffron

Method :
Soak in a small bowl, add 2 tbsp warm milk, saffron and keep aside for 15-20 minutes.
Now we will prepare rabdi for the pan. For this take 1 litre milk in a pan and let it boil on low flame until nearly 1/2 the amount left. Now add sugar, soaked saffron milk, cardamom powder and let it boil for another 5 minutes. Now remove the milk from the heat. Now sprinkle almonds, a pinch cardamom powder and keep aside.
Now make the paneer or chenna take 1 litre milk in a pan and let it heat and remove the milk from the heat.
Now slowly add the lemon juice or vinegar solution and the milk will start curdling. Now strain the cuddled milk(paneer) in a cotton cloth and hang it for nearly 1 hour. Now then knead the paneer by hand or run it through a blender to smoothen it out. Now divided the china or paneer into 8-9 equal portions about the size of  a lemon ball. Roll out the ball till it is smooth and slightly flatten it out and keep aside. Now in a pressure cooker, add 1/2 cup of sugar with 1 glass of water and boil. Now add the flattened paneer or chenna. Now pressure cooker for one whistle and remove from the heat and let it be inside it for 10 minutes. Now remove the cooked paneer with a spoon and put in ready rabdi. Now garnishing with some saffron, cardamom powder  and chopped almonds. Serve hot or cool.
