Gobi malai kofta (creamy cauliflower) kofta recipe

Ingredients:
Gobi (Cauliflower) ka kofta 

For kofta ingredients :

  • 1 medium piece cauliflower (Gobi) grated 
  • 1 onion finely chopped
  • 1/2 tsp garlic paste 
  • 2 green chillies finely chopped 
  • 1/4 tsp salt 
  • 1/4 tsp red chilly powder 
  • 1/4 tsp turmeric powder 
  • 1/2 cup rice flour (chawal ka atta)
  • 1/2 cup gram flour (Besan)
  • 1/4 cup water
  • Oil for frying 


For gravy ingredients:


  • 1 onion paste 
  • 1 onion finely chopped 
  • 1 tbsp garlic-ginger paste 
  • 4 tomatoes puree (boiled and peeled)
  • 1/2 tsp turmeric powder 
  • 1/2 tsp red chilli powder
  • 1/2 tsp black pepper powder 
  • 1 pinch garam masala 
  • salt to taste
  • 2 green cardamom 
  • 1 stick cinnamon
  • 2 cloves 
  • 1 star anise 
  • 1/2 cumin seeds
  • 10-12 cashew nuts paste 
  • 2 tbsp fresh cream 
  • 2 tbsp deshi ghee or butter 
  • 1 tbsp fresh cream for garnish 
Method :
In a large bowl, add all kofta ingredients and mix well. Now heat oil and make small ball sized kofta and deep fry them on the medium flame till golden brown in color and keep aside.

Now  make to kofta gravy, heat ghee or butter in a pan, add cumin seeds, cardamom, cinnamon, cloves, star anise and crackle them and put chopped onion saute for 2 minutes. Now add, garlic-ginger, onion paste, all spices powder, salt and saute for 5 minutes on the medium flame. Now add tomatoes puree and saute for 3-5 minutes. Now add 1 bowl of water to the masala and let the gravy boil for 5-7 minutes. Now add fried kofta and cook for 3 minutes. Now add cashew nuts paste and mix well. After 30 second add fresh cream and mix well and turn off  the flame and allow it to rest for 10-15 minutes. Garnish with 1 tbsp fresh cream. Serve with rice, paratha, rotis.
