Spicy Baigan (eggplant) sabzi recipe

Ingredients :
Spicy Baigan (eggplant) sabzi

  • 1/2 kg. Baigan (eggplant), cut into lengthwise 
  • 5 garlic cloves 
  • 2 green chillies 
  • 2 tbsp yellow mustard seeds 
  • 1 tsp red chilly powder 
  • 1 tbsp coriander powder 
  • 1/2 tsp turmeric powder 
  • 4 tbsp tamarind pulp 
  • salt to taste 
  • 1 tsp cumin, fenugreek, mustard seeds 
  • 8-10 curry leaves or 2 bay leaves
  • 2 tbsp oil
Method :
Soak eggplant in water for 5-10 minutes and drain of all water and keep aside. In a blender, add mustard seeds, garlic, green chillies and blend into a fine paste. Now heat oil in a pan, add cumin, fenugreek, mustard seeds, curry leaves and crackle them and add eggplant with salt, keep the gas at a high flame, just cover the pan with lid. Now after 2 minutes stir eggplant and cover again. After 5 minutes, add masala paste and all spices powder and stir for 5 minutes and add tamarind pulp, 1 bowl water and cook for 5-7 minutes on the medium flame. Now remove from the gas and serve with rice and rotis.
