Makhane (puffed lotus seeds) ki kheer recipe

Ingredients :

  • 100 gms. Makhane (puffed lotus seeds)
  • 1/2 tsp deshi ghee
  • 4 cups milk 
  • 1/2 cup sugar 
  • 1/2 tsp green cardamom powder 
  • 15-20 cashew nuts (kaju)
  • 2 tbsp raisins (kismish)
  • 1 tbsp chopped almonds 
Method :
Heat ghee in a pan, add makhana and roast for 2-3 minutes and keep aside to cool. Now crush them in a blender and make powder and keep aside. Now heat milk in a large pan. Once it start boiling, add makhana powder slowly-slowly in the boiled milk and stir well. Keep stirring every now and then so that the milk does not stick to the bottom and burn. Milk will slowly start reducing and wait till it's reduced to about half, put on medium flame and cook for 10 minutes. Now, add the sugar and mix well till it fully dissolves. Now turn off the heat and add raisin, cashew nuts, almonds, cardamom powder and mix well. Serve it warm or cool.
