Cashew nut Ice-cream recipe

Cashew nut Ice-cream 
Ingredients :
  • 2 cups milk 
  • 1/2 sugar 
  • 1 cup fresh cream or whipped cream 
  • 4 tbsp raisins 
  • 1/2 cup cashew nuts 
  • 1 tbsp vanilla essence 
  • 2 tbsp cornflour +1/2 cup cold milk 
  •  1 tbsp chopped cashew nuts and raisin for the garnish 
Method :
Take milk with sugar and boil it. Now, add milk + cornflour mixture and stir fast for 2 minutes and switch off the flame, keep aside to cool. Now in a blender, add cashew nuts and crush it. Now add boiled milk mixture, cream and mix it until it becomes rich and creamy. Refrigerate the above mixture for 2 hrs with lid on. Now take out the bowl and beat the ice-cream mixture for 5-10 minutes and keep it in freezer for 1 hr. Now remove from the freezer, beat well and add vanilla essence, raisins and stir well for 2 minutes and freeze the mixture for 8-10 hrs. For the serving, top it with chopped cashew nuts and raisin.
