Yam (suran) stir-fry sabzi recipe

Stir-fry 
This recipe is very easy and tasty. I hope all likes this recipe. This is my family's favorite.

Ingredients :
  • 250 gms. yam(suran)
  • 1/2 cup tomato puree
  • 1 tbsp garlic-ginger paste
  • 1 tbsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chilly powder
  • 2 green chillies 
  • salt to taste
  • 1/2 tsp mustard and cumin seeds
  • 8-10 curry leaves
  • 1 tbsp oil 
  • 4 tbsp oil for yam frying
Method :  Remove the skin of the yam, cut into medium square pieces and wash it. Now in a pressure cooker, add yam pieces, 1 glass water, 1/4 tsp salt and boil it until a whistle. Now drain the water of boiled yam and keep aside for cool. Now heat oil in a frying  pan and fry this yam pieces till golden brown colour and keep aside. Now heat 1 tbsp oil in a pan, add cumin, mustard seeds, curry leaves, green chilies and crackle. Now add garlic-ginger paste, all spices, salt (little salt) and saute for 1 minute. Add tomato puree and stir for 3-5 minutes and put in fried yam and cook for 2 minutes and switch off the flame. Serve with rice, rotis, parantha.
