Mix vegetables curry recipe


Ingredients :
  • 200 gms. pumpkin(kaddu) 
  • 2 raw bananas ( kachha kela)
  • 2 raw potatoes (aloo)
  • 100 gms ladyfinger (bhindi, okra)
  • 1 brinjal(baigan)
  • 2 chopped tomatoes 
  • 1/2 tsp cumin seeds,
  • 1/2 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 2 bay leaves
  • 2 tbsp oil
For masala,
  • 2 tbsp yellow mustard seeds 
  • 4 cloves garlic 
  • 1 onion chopped 
  • 1 tbsp coriander seeds or powder 
  • 1/2 tsp turmeric powder 
  • 1 tsp Kashmiri red chilly powder or 2 whole red chillies 
  •  salt to taste 
  • some water 
Method :
 Peel pumpkin, bananas, potatoes, brinjal peel, chop and wash with water. Wash lady fingers before chopping them or else it'd turn slimy. Make the masala paste, in a blender, add all masala ingredients and make a fine paste and keep aside. Heat oil in a pan, add mustard, cumin, fenugreek seeds, bay leaves and crackle them. Add all chopped vegetables, saute and cover with lid. After 1 minute open cover and stir your vegetables for 5 minutes and add masala paste, tomatoes and it stir for 5-6 minutes. Now add 1 bowl water and mix well. Cover and cook for 5-7 minutes. Now check whether your sabzi is soft and switch off the flame. Serve with Rice, rotis.
