Bharwa karela (Stuffed Bitter gourd) recipe

Bharwa karela (Stuffed Bitter gourd) without peeled karela
Ingredients :

  • 1/2 kg. Bitter gourd (karela) 
  • 1/2 tsp salt
  • 1/2 finely chopped onion
  • 1/2 tsp mustard seeds 
  • 1/2 tsp cumin seeds
  • 7-8 curry leaves 
  • 1 tbsp oil for karela fry
Peeled karela 
For stuffing ( karela bharawan) ingredients :

  • 2 chopped onions
  • 1 tsp garlic-ginger paste 
  • boiled bitter gourds seeds 
  • salt to taste
  • 4 tbsp tamarind pulp
  • 1 tbsp coriander powder 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp red chilly powder 
  • 1/2 tsp garam masala powder
  • 2 tbsp raisins (kismis)
  • oil 2 tbsp 
Method :

Wash the bitter gourd, peel and cut into two parts, add 1/2 tsp salt and mix well and keep aside for 10-15 minutes. Now wash the karela again and boil them. In the pressure cooker, add karela, a glass water and 1/2 tsp salt and boil it until a whistle and remove from the flame and keep aside. After some time drain off all water of boiled bitter gourd and keep aside to cool. Now slit the bitter gourd using a sharp knife lengthwise and remove the seeds and keep aside. Now make the stuffing masala, in a blender, add onion and boil karela seeds and finely blend them. Now heat 2 tbsp oil in a pan, add cumin, mustard seeds, curry leaves crackle and add chopped onion saute for 2 minutes. Now add the ginger-garlic paste, onion paste and saute for 5 minutes. Now add all spices powder, salt, tamarind pulp, raisin and cook masala till it gets thick and dry, switch off the flame. Now stuffing is ready and keep aside for it to cool.  Now take a boil bitter gourd stuff in a spoon of stuffing masala. Heat 1 tbsp oil in a pan and fry stuffed the bitter gourd (karela) till they turn golden brown. Serve with rotis, parantha, dal-rice.
