Kala chana (black chickpea) stir-fry recipe


Ingredients : 
For chana boil, 
  • 1 cup black chickpea (kala chana) 
  • 1 pinch bicarbonate (mitha soda) 
  • 1/4 tsp salt 
  • 1 glass water 
For masala making, 
  • 1 tbsp bengal gram (chana dal) 
  • 1 /2 tbsp urad dal
  • 2 dry red chillies  
  • 1 tsp cumin seeds 
  • 1 cinnamon stick 
  • 1/2 tsp black pepper 
  • 1/2 tsp fenugreek seeds
  • 1 tsp fennel seeds 
  • 1/2 tsp onion seeds (kalownji)
  • 1/2 tsp carom seeds( ajwain)  
  • 1 pinch asafoetida ( Hing) 
  • 1 tbsp coriander seeds 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp dried ginger (soonth) powder
  • salt to taste 
For tempering , 
  • 1 tbsp oil 
  • 1/2 tsp mustard seeds 
  • 2 chopped green chillies 
  • 8-10 curry leaves 
  • 1 lemon juice 
Method : 
Soak black chickpea with water for 6-7 hrs. Now add in a pressure cooker all chana, boil ingredients and cover it with lid and boil for a whistle. Now drain all of water and keep it aside. Heat oil in a pan, add all masala seeds, red chillies,dal, cinnamon and roast for 5 minutes and remove it from the heat and make the masala powder in the blender and add turmeric, dry ginger powder, hing, salt and mix well.  Now heat oil in a pan, add mustard seeds, curry leaves, green chillies and crackle it and add boiled chickpea and spices powder and stir for 5 minutes and remove from the flame and add lemon juice and mix well. serve with roti, rice etc.
