Crispy and stuffed masala gol kachori recipe

For the dough,

  • 2 cups all purpose flour (maida)
  • 1 tsp salt
  • warm water
  • 4 tbsp oil

For dry spicy stuffing,
  • 1 cup gram flour ( Besan)
  • 2 tbsp tamarind pulp
  • 1 tsp turmeric powder
  • salt to taste(little)
  • 2 tsp red chilli powder
  • 1/2 tsp black pepper powder
  • 1 tbsp dry mango powder
  • 1 tbsp oil 
  • 1 tbsp roasted coriander powder
  • 1 tbsp fennel seeds
  • 4 tbsp sugar or grated jaggery 
  • 15-20 raisins(kismis)
  • oil for frying
Method :
Heat 1 tbsp oil in a pan, add fennel seeds and gram flour fry for 5-7 minutes. Now add all stuffing ingredients and mix well. Now after 5 minutes remove from the gas and keep aside for cooling. In a big bowl, add maida, salt, oil mix well and add warm water as needed and knead a smooth dough and divided  dough a small shape of the ball size. Now roll out each ball into thick round puri and put 1 tsp stuffing mixture in the center of the puri and wrap stuffing with puri and seal its edges and again give it a shape of ball. Now heat oil in a pan and deep fry all gol kachori. When oil is medium hot, carefully drop 10-12 raw balls in oil and deep fry over low flame until they turn light brown and remove from the oil. Serve with sweet tamarind chutney.
