Raj-kachori recipe

Raj-kachori is tasty and yummy recipe. All like raj-kachori, it has sour,sweet and spicy taste.

Raj-kachori
Ingredients for 6 kachoris :

  • 2 cup whole wheat flour(gehun ka atta)
  • 1 cup semolina( sooji, rava)
  • 1/2 cup all purpose flour 
  • warm water
  • 1 tsp salt 
  • oil for the frying
For the filling:

  • 1 cup whole green gram(moong) soak and boiled
  • 5-6 potatoes boiled, peel and cut cubes 
  • black salt to taste
  • 2 cups sweet curd(dahi)
  • 6 tbsp tamarind sweet chutney(imli ki mithee chutney)
  • 6 tbsp green chutney (hari chutney)
  • 2 tbsp roasted cumin powder 
  • 1 onion finely chopped
  • 1 tbsp chaat masala
  •  1/2 tsp red chilly powder 
  • 6 tbsp nylon sev 
  • 2 tbsp coriander leaves finely chopped
Method:
For the kachori making, add all ingredients in a large bowl and using warm water knead a soft dough. Divide the atta dough into equal portions and roll out into small thick big puris using some dry flour for rolling. Now heat oil in a pan at a high flame and then reduce the flame to slow and deep-fry the puris till crispy and golden brown in colour and remove on the plate and keep aside. Now for the kachori filling, make a hole in the kachori and first put boiled potatoes cubes and boiled moong. Now add black salt, tamarind chutney, green chutney, curd and all spices powder spread on the kachori, chopped onion. Now garnish with nylon sev and coriander leaves.
