Aloo- parval(potato-pointed gourd) ki sabzi





Ingredients :
  • 500 gms. parval peeled and chopped
  • 4 pieces boiled, peeled and chopped potatoes
  • 1 chopped tomato
  • 1 tbsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp cumin seeds powder
  • 1/2 tsp black pepper powder
  • 1/2 tsp dry ginger powder(soonth powder) or ginger past 
  • salt to taste
  • 1 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 2 bay leaves
  • 1/4 tsp asafoetida (hing)
  • 2 tbsp oil
  • 1 tsp deshi ghee 
Method :

Heat oil in a pan, add cumin seeds,mustard seeds, bay leaves, asafoetida and crackle them. Now add chopped parval and cover with lid for 1 minute. Now open lid and stir-fry for 5 minutes. Add boiled potatoes and it saute for 1 minute. Now add all spices, salt, chopped tomatoes and saute for 5 minutes. Add 1/2 glass water and it cover of the pan and let it cook on medium flame for 5 minutes. It remove from the gas and add 1 tbsp ghee. Mix well. Serve it with rice, rotis, paratha, puris.
