Aloo aur papdi (potatoes and flat beans) ki sabzi


  • 250 gms. chopped flat beans( papdi)
  • 3 boil potatoes, peeled and chopped
  • 1 chopped onion
  • 2 chopped tomatoes
  • 1/2 tsp cumin seeds
  • 2 bay leaves
  • 1 tsp mustard seeds 
  • 1/2 tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1/2 tsp red chilly powder
  • salt to taste
  • 2 tbsp oil
  • chopped coriander leaves
Heat oil in a pan, add cumin, fenugreek, mustard seeds, bay leaves and saute for 30 seconds. Now add chopped onion and saute for 2 minutes and add chopped flat beans, salt and cover with lid for 2 minutes. Now open lid stir it and add all spices, tomatoes, potatoes and saute for 5 minutes. Now,
add 1 cup water and again cover with lid for 5-8 minutes and let it cook till liquid almost evaporates and garnish with coriander leaves. Serve with Rotis and rice.
