Besan ( gram flour) ki kadhi wadi recipe (special dish)

Kadhi-wadi is special dish in Bihar which is made on the day of Baisakhi festival  (14 April). All Bihari's cook kadhi-wadi their homes.

Ingredients :
For wadis:
Kadhi wadi

  • 1 cup Gram flour (chana besan)
  • 1/4 tsp salt 
  • 1 pinch eating soda
  • Fry for oil
For kadhi:

  • 1/2 liter sour butter milk or 1 bowl curd 
  • 1/2 cup gram flour ( besan)
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 1 tbsp kashmiri red chilly powder
  • salt to taste
  • 1/2 tbsp sugar
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 15-20 curry leaves
  • 1/4 tsp asafoetida ( Hing)
  • 1 tsp fennel seeds
  • 1/2 tsp finely chopped ginger 
  • 4 tbsp oil
  • coriander leaves for garnish 
Method :
Take a large bowl, add gram flour, salt, eating soda and add some water mix well. Thick batter for wadi is ready. Heat oil in a kadhai and drop round pakoda shape wadis and fry it until it becomes golden brown on medium flame. Now again heat 4 tbsp oil in a pan, add cumin, mustard, fennel seeds, hing, curry leaves and chopped ginger all crackle. Now, add all spices powder, sugar and salt stir for 2 minutes. Add 1/2 cup besan with 1 cup water mix liquid and just stir for 5 minutes and add butter milk or curd and saute for 1 minute. Now add fry wadis and it boil 20-25 minutes on medium flame. Now check the wadis, if it becomes soft then remove from the gas and garnish with coriander leaves. Serve with Rice.
