Baigan(eggplant) ki bhujiya recipe ( dry and easy)

Baigan ki bhujiya
Ingredients :

  • 1/2 kg. chopped eggplant
  • 1 chopped onion
  • 1/2 tsp turmeric powder
  • salt to taste( little) 
  • 2 green chilly
  • 1/4 tbsp red chilly powder 
  • 2 tbsp oil
  • coriander leaves for garnish
Method :
Heat oil in a pan, add chopped green chilly and after half minute,add chopped eggplant with onion,salt,turmeric, red chilly powder and cover with lid for 5 minutes on the high flame. Again stir-fry and check whether your eggplant are soft and dry. Now remove from the gas and garnish with coriander leaves. Serve with Rotis, paratha, puri and rice-dal.
