Softy and spongy Idli Recipe

Ready Idli
Ingredients :
  • 200 gm.( 1 glass) Rice 
  • 50 gm. Urad dal(white)
  • 1 tsp salt 
  • 1 tbsp sugar 
  • 1/2 tsp eating soda ( bicarbonate of soda )
  • Oil/butter for greasing the Idli mould
Method :
Take a large bowl and add Rice, Urad dal and sufficient water and soak 6-7 hr. or overnight. After soaking for the said time, wash and drain Rice and Urad dal and grind it coarsely in a blender now keep aside again for 7-8 hr. After that mix salt, sugar, eating soda and mix well, put aside for 5-10 minutes. Now Idli batter is ready to be cooked when the batter is well fermented. Now grease the Idli's mould and fill each of them with half of batter. Now steam water in the cooker and put idlis batter with mould and cover with cooker lid without whistle and cook on high flame for 10-12 minutes.When cool and remove with knife put in the plate. Serve with sambhar and coconut chutney or any chutney.

Note:
You may also make nachni idlis by adding 2-3 tblsp of nachni flour in the batter.
