Chhola Masala recipe

Chhola Masala is very popular dish. My family is very crazy for chhola bhatura .Chhola masala is very tasty dish.
Chola Masala

Ingredients :
  • 250 gm. chickpeas (kabuli chana) 
  • 2 pinch eating soda
  • 2 onions paste
  • 1/2 tsp ginger paste
  • 1 cup tomatoes pulp
  • 2 tbsp tamarind pulp(imli ka pulp)
  • 2 tsp kashmiri red chilli powder 
  • 1+1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tbsp chhola masala 
  • 1/2 tsp cumin seeds
  • 2 bay leaves
  • 1 chopped onion 
  • 2 cloves
  • 2 green cardamom
  • 2 sticks cinnamon
  • 4-5 tbsp oil
  • salt to taste 
  • 1 tbsp sugar or jaggery 
  • 2 tbsp fresh cream for garnishing 
Method :
Soak chickpeas in water for 7-8 hrs. Now boil soaked chickpeas in the presser cooker with 2 glasses of water, 1/2 tsp salt, eating soda until a whistle. Now turn the gas off and put cooker aside to cool. Now heat oil in a pan, add cumin seeds, cardamom, cloves,cinnamon sticks, bay leaves and chopped onion and fry till golden brown. Add ginger and onion paste, all masala powder and salt. After 1 minute add tomato puree, sugar/jaggery, tamarind pulp and fry all masala well. Now after 10 minutes, add 1 bowl water and boiled chickpeas and cook for 5-7 minutes and remove from the gas and garnish with cream. Serve with bhatura, puris, rice or paratha.
