Baigan(eggplant) sabzi ki recipe




Ingredients :
  • 500 gm. baigan(eggplant) clean and chopped long size
  • 3 tomatoes puree
  • 1 tsp turmeric powder(haldi)
  • 1 tsp coriander powder(dhaniyan)
  • 1/2 read chilly powder(lal mirchi)
  • salt to taste
  • 1/2 tsp cumin seeds(jeera)
  • 1/3 tsp fenugreek seeds(methi)
  • 1/4 tsp mustard seeds(Rai)
  • 6-8 curry leaves
  • 2 tbsp oil
  • some chopped coriander leaves for garnish
Method:
Heat oil in a pan,add cumin, mustard,fenugreek seeds and curry leaves.  Now after its cracked,add chopped eggplant ,salt and mix well and stir its cover with lid high flame. After 1 minute checked eggplant is soft and add all spices powder and tomato puree and stir and cover with lid.
After some time open lid and stir. When your sabzi is dry and off the flame. Now garnish it with coriander leaves. Serve it with Rice or roti or paratha.
