Laziz Baingan (eggplant) ki sabzi recipe

Ingredients :
Ready eggplant vegetable 

  • 1/2 kg. small eggplant
  • 1 cup tomatoes puree
  • 1/2 tsp fenugreek (methi seeds)
  • 1/2 tsp cumin seeds
  • 1/3 tsp mustard seeds
  • 6-7 curry leaves or 1 bay leaf 
  • 2 tbsp oil
  • salt to taste
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1/2 tsp red chilli powder 
  • chopped coriander leaves

Method :
Take eggplant and chop it in between and put it in water for 5-7 minutes.Now, drain off all water. Heat oil in a pan, add cumin seeds, fenugreek, mustard seeds, curry leaves and crackle them in heat oil.  After that add, chopped eggplant with salt and high flame just cover it with lid.  Now, after 2 minutes stir eggplant and covered. After 5 minutes add, in eggplant, coriander, turmeric, red chilly powder and tomato puree and stir for 1 minute and cover it with lid and cook for 5 minutes on the low flame. After 5 minutes open the lid and stir eggplant and remove from the gas.Your eggplant vegetable is ready. Garnish it with chopped coriander leaves and serve with Rotis, rice, parantha, puris.
