How to make Aloo vada or batata vada (potato vada) recipe

Batata vada Mumbai ki saan hai.

For Aloo vada,
Ingredients :
  • 250 gm. boiled, peeled and mashed potato (Aloo)
  • 1 tsp garlic-ginger paste
  • 1/2 tsp green chillies paste
  • salt to taste
  • 1 tbsp oil
  • 1 tbsp coriander - curry leaves paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp mustard seeds
  • 1/2 cumin seeds
  • 1 tsp urad dal (split black lentils)
  • 7-8 curry leaves
  • Oil for deep fry
For batter :
  • 2 cup gram flour ( besan)
  • 1/2 tsp salt
  • 1/3 tsp cooking soda
  • water as required 
Method :
Heat oil in a pan, add mustard seeds, cumin seeds, urad dal and curry leaves and heat them after they are cracked. Now add, garlic-ginger paste for few seconds. Add, coriander-curry leaves paste and saute for 30 seconds. Now add, mashed potato, salt, turmeric powder, red chilli powder and cook it for 5 minutes. Turn off the flame. Wait for them to cold and make balls of it. In a big bowl, add batter ingredients required for making the thick batter. Now, heat oil to deep fry potatoes, add potato balls in the batter and coat it well. After that cook it on high flame till it becomes golden brown. Remove it on the plate. Serve it with garlic chutney or tomato sauce or eat it with Pav.
