Baigan(eggplant) aur papdi(flat beans)ki sabzi by Meenakshi pathak

Ingredients-

  • 250 gm. papdi (flat bins)chopped
  • 250 gm. baigan(eggplant)chopped
  • 2 tsp dhaniyan powder
  • 1 tsp haldi powder
  • 1 tsp red chilly powder
  • salt to taste
  • 3 chopped tomatoes
  • 1/2 tsp jeera
  • 1/2 tsp methi seeds
  • 1/2 tsp Rai
  • 2 bay leaves
  • 2 tbsp rai tal (mustard oil)
  • chopped dhaniyan patta
  • 1/4 glass water
Method-
Sabse pahle sabzi ko achhe se saaf kar ke chop kar le.Ab gas per pan garam kar ke oil daal kar jeera, rai,methi ,bay leaves daal kar halka brown hone ke baad pan mei chopped sabzi daalen phir salt daal kar  pan ko cover kar len.Ab 1-1 minute per sabzi ko ladte rahen phir usmei sabhi masala aur chopped tomatoes daal kar aanch ko slow kar ke 5 minutes ke liye covered karen.Ab cover open kar ke sabzi ko baar- baar ladte rahen aur phir 1/4 glass paani daal kar gas ko medium kar ke pan ko  covered karen.Ab 5-7 minutes
ke baad gas off karen.Ab dhaniyan patta se serve kare. Sabzi ready hai.
