Skinny potatoes stir-fry




Ingredients :

  • 500 gm. potato, boiled and cut into 4 parts, not peel  
  • 1 tsp cumin,mustard seeds, onion seeds
  • 1 tsp dry fenugreek leaves(kasuri methi)
  • 5-6 curry leaves
  • 1 onion, chopped
  • salt to taste
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1/2 tsp red chilli powder
  • 2 green chillies chopped 
  • 2 tbsp vegetable oil
  •  coriander leaves for garnishing
Method:
Heat oil in a pan, add all seeds and crackle, add onion, curry leaves, kasuri methi, green chillies and saute for 1 minute. Add boiled potato, all spices powder, salt and stir-fry for 5-7 minutes on the medium flame. Remove from the heat and garnish with coriander leaves. Serve it with Rotis, parantha, puri.
