Gajar (carrots) ki easy and dry sabzi ki recipe

 Ingredients -
Cooked carrots sabzi
  • 1/2 kg. peeled and chopped carrots(gajar)
  • 1 chopped onion
  • 3-4 chopped, garlic cloves
  • 1 chopped green chilli 
  • 8 curry leaves
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp onion seeds(kalonji)
  • 1/2 mustard seeds
  • 2 tbsp oil
  • salt to taste
  • 1 tsp turmeric powder
  • 1 tbs coriander powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp black pepper powder
  • 1/4 tsp cinnamon powder
  • 1/2 tsp dry ginger powder
  • chopped coriander leaves for garnishing 
Method :
Heat oil in a pan, add all seeds and crackle, add garlic, onion, green chilli, curry leaves and saute for 2 minutes. Now add chopped carrots, salt and saute for 2 minutes. Add all spices powder mix well and stir. Cook on the slow flame till carrots cooked and remove from the gas and garnish with coriander leaves. Serve with Rotis and other dishes.
