Baigan(eggplant) ka bharta recipe


  • 1 large baigan(eggplant)
  • 4 chopped garlic cloves
  • 1 tsp chopped ginger
  • 2 chopped green chillies 
  • 2 tbsp lemon juice
  • 1 tbsp mustard oil
  • salt to taste
  •  coriander leaves for garnish 
Method :
Eggplant chop it in between and roast it on the gas and keep aside for cool. Now peeled and mash the roasted eggplant. Now heat oil in a pan, add garlic-ginger and green chilies till it become light golden and add mashed eggplant and salt and saute for 1 minute. Now remove on the heat, add lemon juice and coriander leaves. Serve hot or cool.
