Dum aloo ( spicy baby potatoes) curry recipe


Ingredients :
  • 1/2 kg. aloo (boiled and peeled
  • 1 chopped onion
  • 1/2 cup onion paste 
  • 1 tsp garlic-ginger paste
  • 2 green chillies 
  • 1 tsp red chilly powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp turmeric powder
  • 1 tbsp coriander powder
  • 1/2 cup curd (Dahi)
  • salt to taste
  • 2 bay leaves
  • 1/2 tsp cumin powder
  • 1/4 tsp black pepper powder
  • 1/2 tsp cumin seeds
  • 1 cinnamon stick
  • 2 cardamom 
  • 2 cloves
  • 1 anise 
  • 1/2 tsp onion seed (kalonji)
  • 4 tbsp oil
  • potatoes  frying 

Cooking aloo dum
Heat oil in a pan and fry the potatoes until light golden color and remove into plate and keep aside. Now add cumin, onion seeds, cinnamon, anise, bay leaves, cardamom, cloves and crackle. Now add chopped onion and saute for 2 minutes. Add garlic-ginger, onion paste and saute for 1 minute. Now add all spices powder, green chillies, salt and saute for 2-3 minutes. Now add curd and mix well and add fried baby potatoes and stir and add a bowl water and cook for 5-8 minutes and turn off the flame. Serve with rice, puris, paratha, rotis.
