Aaloo- Gobi (potato-cauliflower)ki sabji



Ingredients :
  • 1 small piece cauliflower, chopped and wash
  • 4 medium raw potatoes, chopped and wash  
  • 1 big tomato, chopped 
  • salt to taste
  • 1 tbsp coriander powder 
  • 1/2 tsp turmeric powder 
  • 1/2 tsp red chilli powder 
  • 1 small piece fresh ginger 
  • 1 tsp cumin powder
  • 1/2 tsp black pepper powder 
  • 1/2 tsp cumin seeds
  • 1/4 tsp mustard seeds 
  • Asafoetida (Hing)
  • 1 bay leaf 
  • 2 tbsp oil 
  • 1 tbsp ghee 
  • coriander leaves for garnishing 
Method :
In a mixture jar, add ginger piece, coriander powder, red chilli powder, turmeric powder, cumin powder, black pepper powder and 4-5 tbsp of water to make a masala paste. Heat oil in a pan, add cumin, mustard seeds, hing and bay leaf, crackle them. Add chopped Aloo-gobi and salt . Stir and cover with a lid and let it cook on medium flame for 1 minute. After 1 minute open the cover and stir them, add tomato and masala paste and stir for 2-3 minutes until spices start leaving the oil.  Add a cup of water, mix well. Now cover the pan and let it cook on medium flame for 5-7 minutes until the vegetables are soft. Add ghee and mix well. Turn off the flame. Garnish with coriander leaves. Serve it with rice, paratha, puri, chapati.
